The NZ Diploma in Cookery Level 5 is for students who wish to develop their existing skills and knowledge in advanced culinary practice. The aim of the programme is to advance the learner’s skills in culinary practice.

In particular, this programme aims to develop the learner’s abilities in researching, planning, developing, implementing and analysing of food products, recipes, and menus which ensure advanced practice in food preparation, cooking and presentation. Developing these skills is essential to the learner for progressing into supervisory roles within the hospitality and catering industry.

This programme allows graduates to obtain management skills in a commercial kitchen. In addition, graduates may pursue higher level employment opportunities in food production operations leading to senior supervisory roles. There are two strands to the programme: Management and Advanced Cookery Strand.

The NZ Diploma in Cookery Level 5 with strands in Cookery or Patisserie is a full-time programme of study of 34 weeks duration, plus a 2-week holiday. It Is a 120 NZQA credit programme. The programme includes 8 modules, all of which are compulsory. Students who successfully compete this programme will then have the option to continue onto If you feel that you have gained sufficient experience through time worked in the industry or have a relevant prior qualification, you might be eligible for Credit Recognition and Transfer (CRT) or an Assessment of Prior Learning (RPL). Entry requirements

  • You must have achieved the NZ Certificate in Cookery Level 4, National Certificate in Level 4 or equivalent or demonstrated equivalent industry practical competence, knowledge and experience to the programme manager.
  • Applicants must be over 18 years of age
  • Pre-requisite: Learners must have complete the Food Safety units in the Level 4 programme to start the Level 5 programme.
